Interests and Responsibilities

My primary responsibility is to direct the dietetics program at Auburn. This program provides the academic (or didactic) course work that is the basis for a career as a registered dietitian. It is an undergraduate program that also may be accessed by graduate students who wish to become registered dietitians. We actively assist each Auburn student who applies for a dietetic internship, the second step in preparing for a career in dietetics. These internships take place following graduation, and are not available at Auburn.

     

My other responsibilities include teaching food service management and other courses as listed below. Research interests are in the areas of food service management, food selection, food security and food safety.

Recent Research Project

“Grow your own jobs.” A partnership between Auburn University and the west Alabama town of Thomaston resulted in renovation of an obsolete school lunch facility to establish a food-processing kitchen for processing locally grown produce into jams, jellies and pickles.
